Apple 'Super Bowl' Baked Oatmeal

'Football field' apple baked oatmeal with peanut butter and sprinkles for the 'crowd'. Healthy, vegan, and bright green!

  • For the baked oatmeal
  • 1 cup spinach
  • ⅓ cup almond milk
  • 1 apple, grated
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ½ cup rolled oats
  • ¼ teaspoon baking powder
  • Pinch of salt
  • For the toppings
  • Peanut butter
  • Sprinkles
  1. Preheat the oven to 350°F (180°C). Grease a small ramekin.
  2. Use a blender to puree the spinach and almond milk. Transfer to a medium-sized bowl.
  3. Stir in the grated apple, cinnamon and vanilla extract. Add the rolled oats, baking powder and salt, and mix until well combined.
  4. Transfer the mixture to the prepared ramekin. Bake for 18 - 22 minutes, or until the top is dry and a little firm.
  5. Drizzle or spread some peanut butter around the edges of the baked oatmeal. Cover the peanut butter with sprinkles to create the Super Bowl ‘crowd’. Enjoy!
