Peanut Butter Everything Steel-Cut Oatmeal

With cinnamon, banana, walnuts, raisins and granola, this is a super-duper exciting oatmeal!

  • 1 cup almond milk
  • 1 cup water
  • ½ cup steel-cut oats
  • Pinch of salt
  • 3 - 4 tablespoons peanut butter*
  • ¾ teaspoon ground cinnamon
  • 1 banana
  • 1 teaspoon vanilla extract
  • 2 - 3 tablespoons chopped walnuts
  • 2 tablespoons raisins
  • ¼ cup Peanut Butter Granola (Oil-Free), or more
  1. In a saucepan, bring the almond milk and water to a boil, and then turn down the heat to medium-low. Add the steel-cut oats and salt, and stir well. Stir in the peanut butter and cinnamon.
  2. Steel-cut oatmeal generally takes 20 - 30 minutes to cook. As it’s cooking, add more almond milk if it looks as though the oatmeal is drying out.
  3. When the oatmeal is close to being ready, slice the banana. Stir in most of the banana slices, reserving some for the topping. Add the vanilla extract.
  4. When you are pleased with the consistency of the oatmeal, divide it between two bowls. Top each oatmeal with the reserved banana slices, as well as chopped walnuts, raisins and granola. Enjoy!
*Alternatively, use 4 tablespoons (¼ cup) of PB2 mixed with 3 tablespoons of water.
