Sugar-Free, Oil-Free Banana Granola

Seriously healthy granola! This chewy granola is gluten-free, vegan, oil-free and sugar-free! What's the secret? A banana! That beautiful fruit adds tons of moisture of sweetness to everything, including granola.

Yield: Makes 3 Cups
  • 1 tablespoon flaxseed meal
  • 2 tablespoons water
  • 1 very ripe banana
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1½ teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 cups rolled oats
  • ⅓ cup shredded coconut
  • ⅓ cup chopped walnuts or pecans
  1. Preheat the oven to 340°F (170°C). Line a large baking tray with non-stick paper.
  2. Whisk together the flaxseed meal and water in a large bowl. Let sit for 5 minutes.
  3. Add the banana and mash throughly. Mix in the cinnamon, nutmeg, vanilla extract and salt. Stir in the oats, shredded coconut and walnuts, and mix until well combined (it's easiest if you use your hands).
  4. Transfer the mixture to the baking tray. Bake for 22 - 28 minutes, mixing the granola (gently) with a fork at the 20 minute mark. Allow the granola to cool.
  5. Once cooled, store in an airtight container. Enjoy with yogurt and fruit, or just by the handful.
For more protein, try adding some almond butter (or another nut butter). This should also yield a crunchier granola with more clusters/chunks.
