Apple and Whiskey Overnight Oats
Overnight oats with apples for taste, spinach for color, and whiskey because it's St. Patrick's Day!

  • For the Overnight Oats
  • 1 cup spinach, stems removed
  • ¼ cup milk of choice
  • ¼ cup apple juice
  • 1 green apple
  • ⅔ cup rolled oats
  • ½ teaspoon ground cinnamon
  • Pinch freshly grated or ground nutmeg (optional)
  • ⅔ cup vanilla yogurt
  • 1 tablespoon whiskey (or more)
  • 1 teaspoon vanilla extract
  • For the Frozen Yogurt Topping
  • 1 frozen banana
  • ¼ cup vanilla yogurt, frozen in an ice-cube tray
  • Rainbow sprinkles (optional)
  1. Make the Overnight Oats: Use a blender to blitz together the spinach, milk and apple juice. Transfer to a bowl or container.
  2. Dice the apple, and add it to the bowl. Add the oats, cinnamon, nutmeg, yogurt, whisky and vanilla extract. Mix well.
  3. Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
  4. Make the Frozen Yogurt Topping (best made in the morning): Allow the banana to thaw for approximately 10 minutes.
  5. Use a food processor or Yonanas machine to process the banana and yogurt into a soft-serve ice cream consistency. If using a food processor, scrape down the sides regularly (it takes around 5 minutes to form frozen yogurt). For the best “frogurt” consistency, place the mixture in the freezer for about 10 minutes.
  6. Divide the overnight oats between two bowls (or Irish beer glasses). Top each bowl (or glass) with half of the frozen yogurt topping and some rainbow sprinkles. Enjoy!
Ensure your banana was very ripe before freezing it.
