A fresh ‘n’ fruity vegan smoothie bowl made with banana, mango and cherries, and topped with granola.
A long time ago in what feels like a galaxy far, far away, I would have a smoothie for breakfast. Not just any smoothie – the same banana-berry smoothie day after day after day.
This was after half a year of eating Special K and yogurt for breakfast every day. And that came after eating the same store-bought granola nearly every morning for over a year.
Somewhere between disliking breakfast as a child and coming down with a case of full-blown breakfast-mania in my late teenage years, I was continuously going through breakfast ruts. Well, in retrospect they seem like breakfast ruts. At the time I’m sure I worshipped that bowl of Special K.
So, I guess my point is: if you’re someone who eats the same thing for breakfast everyday, then I’m in no position to judge.
That being said, these days my problem is having too many breakfasts that I want to make all at once. Due to my obsessive love of baked oatmeal and pancakes, I often forget my old favorite: the humble smoothie.
I know I’m pretty late to the smoothie bowl party, but hey, better late than never. As I explained in my last smoothie bowl post – which was, oddly enough, my first smoothie bowl post – smoothie bowls seemed weird to me until very recently. It wasn’t until I realized the toppings were the star of the smoothie bowl show that everything made sense.
The base of this smoothie bowl is a frozen banana, mango chunks, cherries and coconut milk (from the carton, not the can). A little lemon juice makes everything taste a little more fresh ‘n’ fruity, so to speak.
Then come the toppings! I went for sliced banana, strawberries, cantaloupe (also called rockmelon) and some Passion Fruit and Coconut Granola.
Since I wanted you to be able to see the smoothie in these photos, I didn’t go nuts with the toppings. But as soon as the camera was turned off, that smoothie bowl was smothered in granola. As it should’ve been.
- For the smoothie
- 1 frozen banana
- ½ cup frozen mango chunks
- ⅓ cup frozen cherries
- ½ teaspoon lemon juice
- ½ teaspoon vanilla extract
- ⅓ cup coconut milk
- Sliced fresh fruit
- Passion Fruit and Coconut Granola
- Blend the frozen banana, mango chunks, cherries, lemon juice, vanilla extract and coconut milk until smooth. For a thinner smoothie, add more coconut milk. For a thicker smoothie, add more frozen mango chunks or cherries.
- Transfer the smoothie to a bowl. Top with some sliced fresh fruit and granola. Enjoy!
Use coconut milk from the carton, not the can. You can substitute almond milk, but it won’t be quite as creamy.
