I’m not embarrassed to admit that I love cake batter (and cookie dough!). One of the best parts of baking pretty much anything is eating the spoonfuls of batter that stick to the bowl. Ok, maybe the batter doesn’t “stick” to the bowl so much as I purposely do a sub-par job of transferring the batter from the bowl into the baking dish. Laziness pays off, people.
Sometimes I feel like cake batter, but simply can’t be bothered to bake a whole cake (laziness strikes again). So I decided to make a cake batter smoothie instead. It only takes a few minutes, and you don’t end up with a whole cake hanging around. Plus, you get a whole glass of cake batter!
A large glassful of cake batter? Breakfast win!
So, let me tell you the magic behind this cake batter smoothie. It starts off which some typical smoothie ingredients – a frozen banana, cocoa powder and almond milk. For extra batter-esque creaminess, some yogurt is added. Molasses and vanilla extract adds a ton of cake batter flavor.
Then the final, essential ingredients: cream of tartar, baking soda and salt. Sounds odd, I know. But the teeny, tiniest pinch of these three ingredients is what really changes this from a standard chocolate smoothie to a chocolate cake batter smoothie. The key is not to add to add too much – you’re not actually baking a cake!
I didn’t notice much of a banana taste in this smoothie, but I tend not to notice bananas that much. Speaking of bananas, make sure your banana is very ripe (the riper the better). If your banana isn’t sweet enough (or your yogurt is sour), you may need to add some maple syrup or other sweetener.
As for the yogurt, I used a low-fat, vanilla-flavored yogurt. But most types of yogurt should be fine – dairy, soy, almond, coconut, plain, etc. Just try to avoid overly sour yogurts because, you know, cake batter ain’t sour. Also, for that rich, creamy cake batter taste, avoid fat-free yogurt.
Oh, and the sprinkles? 110% necessary.
- 1 frozen banana
- ¼ cup vanilla-flavored yogurt (dairy or non-dairy)
- ½ cup almond milk
- 1 tablespoon cocoa powder
- ½ teaspoon vanilla extract
- ¼ teaspoon blackstrap molasses
- Tiny pinch of cream of tartar
- Tiny pinch of baking soda
- Tiny pinch of salt
- 1 teaspoon sprinkles
- In a blender, combine the frozen banana, yogurt, milk, cocoa powder, vanilla extract, molasses, cream of tartar, baking soda and salt. Blend until smooth.
- Transfer the smoothie to a tall glass and top with the sprinkles. Enjoy!
